This year our orchard blessed us with baskets of ripe, juicy peaches. While we love to eat them fresh, I'm always on the lookout for fun ways to preserve that golden sweetness for the months ahead.

Peach preserves are one of our favorite recipes because they only require three simple ingredients: peaches, sugar and lemon juice.
Not only that, they are surprisingly easy to put together and can for long term storage. And you don't even have to can them. They work great in the freezer for about 6 months as well.

To get started, we wash the peaches and place them in a pot of boiling water for 30-60 seconds. Strain them and place them into an ice bath. This will help the skins of the peaches to peel right off.
Next, pit the peaches and place them in a food processor. Pulse until it is chunky but not huge pieces.
Add the peaches to a large pot and cook them until bubbling. Lower the heat and simmer for 10-15 minutes until soft. Then add sugar and lemon juice.
Bring back to a low boil and stir constantly for 2 minutes. Lower the heat and simmer another 10-15 minutes.
Ladle peaches into hot jars, leaving a 1/4 inch headspace. Process in a boiling water bath for 15 minutes for pints and 20 minutes for quarts based on the 1000ft elevation.
Once the water bath is done, place them on the countertop to cool for 24 hours. Then label and put on the shelf.
If you don't want to can, simply add them to jars or containers leaving enough headspace for the preserves to expand in the freezer. And put them into your freezer for up to 6 months.
There's nothing like opening a jar in winter to enjoy the sunshine of summer peaches.
