Cheesy Alfredo Ravioli with Zucchini
During the summer months, it is always so refreshing to go out to the garden and pick fresh veggies. From tomatoes and beans to squash and onions. There is nothing like home grown food.

But some home grown vegetables can get out of hand, like zucchini. Don't get me wrong. I love a good zucchini. But sometimes there is an over abundance of it and we aren't quite sure what to do with it.
Over the years, creativity has taken over and we've found new and yummy ways to eat all that tasty zucchini. Today's recipe is one of those experiments. It is a ravioli and zucchini recipe that your family will love.
One thing I love about this recipe is you can make a quick, homemade alfredo sauce or you can open a can of store bought. It really works for any kitchen. And if you love making pasta, you can make homemade ravioli. I'm not there yet on my cooking journey, but maybe some day.
How to Cook Zucchini
Zucchini is probably one of the easiest of the squash family to cook. It has a deep green outer skin and a nice soft interior. You don't need to peel your zucchini to cook it. In fact, the skin adds a little crunchy to your meal.
For this recipe, we are sautéing our zucchini. Cut it into 1" rounds and then quarter them. Place them in a hot pan with butter and sauté them until they become soft.
Wait to add salt until the final minutes of cooking. This will help keep your zucchini crisp and not limp and soggy.
