Simple Breakfast Potatoes

My husband LOVES breakfast.  And when I say "loves" I mean he could eat breakfast for every meal.  

However, I personally like sweet breakfasts like buttermilk pancakes with strawberry jam.  He prefers savory breakfasts that include lots of meat and potatoes....and usually rice, but that is another story.

When we first got married I was not great at breakfast.  Don't get me wrong I could make some mean pancakes and french toast, but he liked eggs and that was not my forte.  

However, over the years I've been able to put together some yummy dishes that he enjoys and appreciates like this quick breakfast skillet potatoes recipe.  Not only is is quick, but it is yummy!!!

To start you'll need baked potatoes.  If you are like me, baked potatoes aren't typically just lying around your house.  But you can make them super quick with our microwave baked potato recipe. Once you've got those potatoes baked, peel them.  

Now as an option, you can leave some the skins of the potatoes on.  This is something I'll typically do for a bit more flavor, color and because sometimes I'm feeling lazy and don't want to peel the entire potato.

Once you've got your potatoes all cooked, just simply cut them into 1/2" pieces that are perfect for big and little mouths.  

Next, fry some bacon in the skillet and then chop it into pieces.  Saute your veggies in in the skillet until soft.  Now combine potatoes, veggies and bacon in pan and mix.  

Next open up some spots in between the potatoes for eggs.  Fry up your eggs to your liking. 

Top the entire dish with cheese and fresh basil and serve hot!!

Breakfast Skillet Potatoes

Make this hearty breakfast with the help of a few potatoes. Need to feed more? Just add a few more potatoes and another egg or two.
prep time: 15 minscook time: 20 minstotal time: 35 mins

ingredients:


  • 6 baked potatoes
  • 1 green bell pepper
  • 1 red  bell pepper
  • 1/2 onion, chopped
  • 1/2 lbs bacon
  • 1 c. cheddar cheese, shredded
  • 1 Tbsp vegetable oil
  • fresh basil

instructions


  1. Peel and chop baked potatoes and  dice bell peppers into 1/2" pieces.  
  2. Heat a skillet to medium heat and cook bacon until crisp.  Remove from skillet.
  3. Add potatoes to bacon grease in the hot skillet.  Cook for 5-7 minutes.  Remove potatoes from skillet.
  4. Add oil to hot skillet and add bell peppers and onions.  Sauté until tender.  
  5. Add potatoes and bacon back into skillet and sauté all the veggies for 2 minutes.  
  6. Make a well several places throughout the skillet to crack an egg into.  Crack eggs into the wells and cook on low until cooked to your liking.
  7. Top entire skillet with cheese, salt and pepper and basil.
